Egg And Bean Tostadas

Although I am not much of a cook, there are a handful of recipes that I have mastered over the years. One of them is our Saturday morning staple – Egg And Bean Tostadas. This is a fairly simple dish that is quite filling.

I have included the recipe below. You will notice that I have written the recipe in a much better way than many cooking websites or books by including the measurements both in the list of ingredients and in the steps of the recipe (I cannot stand going back and forth between the steps and the measurements when cooking, it is extremely inconvenient).


Egg And Bean Tostadas – Serves 4

INGREDIENTS

For the base:

  • πŸ›’οΈ Vegetable oil (1 Tbsp)
  • πŸ₯š Eggs (4) or egg whites ( )
  • πŸ§… White onion (Half)
  • πŸ§„ Garlic (1-2 cloves depending on your preference)
  • πŸ… Tomato (1 large)
  • 🟀 Pinto beans (apx. 15 oz)
  • 🌢 JalapeΓ±o pepper (1) or Chipotle peppers in adobo sauce (2)
  • πŸ§‚ Saltand pepper (to taste)
  • πŸ«“ Corn tortillas (4)
  • 🌱 Cilantro (1 tsp)

For the salad:

  • πŸ«‘ Bell pepper (1) – The color does not matter by I prefer green
  • πŸ₯‘ Avocado (1)
  • 🍏 Apple cider vinegar (2 tsp)
  • πŸ›’οΈ Olive oil (2 tsp)
  • πŸ§‚ Salt and pepper (to taste)

For the topping:

  • πŸ§€ Crumbled feta cheese
DIRECTIONS
  1. πŸ₯š Cook eggs
    • You could choose how you cook your eggs. We prefer egg white frittatas, which we make using our Brava oven.
  2. On high heat to a pan add:
    • πŸ›’οΈ Olive oil (1 Tbsp) and wait for it to heat up
    • πŸ§„ Diced garlic (1-2 cloves depending on your preference)
    • πŸ§… Diced white onion (Half)
  3. Cook until fragrant and tender, frequently stirring
  4. Reduce heat to medium
  5. Add
    • πŸ… Diced tomato (1 large)
    • 🌢 Diced JalapeΓ±o pepper (1) or diced chipotle peppers in adobo sauce (2)
      • The amount really depends on your preference for spiciness. Remember to remove the seeds for a milder kick, or leave the seeds in if you prefer it hot.
    • 🟀 Pinto beans (apx. 15 oz)
      • We used to use canned pinto beans, but have switched to using dry beans which we make in our pressure cooker the night before.
  6. AddπŸ§‚ salt to and pepper (to taste)
  7. Cook until pinto beans and tomatoes are soft, frequently stirring
  8. You can use a potato masher to make the mixture more of a paste, but this is optional
  9. Sear πŸ«“ corn tortillas (4) – the crispiness of the tortilla depends on your preference, so decide how long you want to sear them.
  10. In a bowl add
    • πŸ«‘ Diced bell pepper (1)
    • πŸ₯‘ Diced avocado (1)
    • 🍏 Apple cider vinegar (2 tsp)
    • πŸ›’οΈ Olive oil (2 tsp)
    • πŸ§‚ Salt and pepper (to taste)
  11. πŸ«“ On top of each tortillas add in the following order:
    • πŸ₯š Egg or egg white frittatas
    • 🟀 Bean mixture
    • πŸ₯‘ Avocado bell pepper mixture
      • You could leave this on the side if you prefer
    • πŸ§€ Crumbled feta cheese (a sprinkling)
    • 🌱 Diced cilantro (a pinch)
